Kale Cucumber Salad

Kale Cucumber Salad

Ingredients:

  • Salad:
  • 1 bunch kale, shredded
  • 1 head red romaine lettuce, shredded
  • 1 nori sheet, cut into thin strips
  • 1 bell pepper, finely chopped
  • 1 avocado, cubed
  • 1 cucumber, sliced
  • 1 mango or pear, cubed
  • Dressing:
  • 1/4 cup exra virgin olive oil
  • 1 Tablespoon apple cider vinegar or lemon juice
  • 1/4 cup tahini
  • 2 teaspoons ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon cayenne
  • 1/4 cup agave syrup or maple syrup
  • 1 teaspoon sea salt

Directions

  1. Mix dressing ingredients in a large bowl.
  2. Marinate kale in dressing for 5 minutes before adding remaining salad ingredients.
  3. Mix all ingredients thoroughly. Serve fresh.
